No-Guilt Pesto Zucchini “Pasta” with Shrimp.

Growing up, one of my favorite foods was pasta! Especially the homemade pasta my mom and grandmother used to make. The house always smelled so good and I looked forward to eating it every time! I will never forget my grandmother saying: “la pasta abunda” - “Pasta goes a long way” so every time I had a bunch of my friends over, that’s what we would have.
I point this out because I do love pasta, but if I eat it everyday it will give me stomach pain. White flours - and too much gluten, bloats me, gives me gas, and all other symptoms you don’t want to know - or perhaps this happens to you too?
Here is a delicious, healthy alternative that will leave you satisfied - just like pasta! But without the pain or guilt that comes with it.
For the “Pasta”:
3 zucchini
3 plum tomatoes, chopped
1-2 lb. Shrimp
1 lemon juice
Seafood Seasoning
For the Pesto Sauce:
Bunch of Cilantro
Bunch of Parsley
Bunch of Basil
2 cloves of garlic
¼ pine nuts
¼ cup of parmesan cheese
½ avocado
3 tbsp. Of extra virgin olive oil
Pinch of salt & pepper
Drop of water if too thick
Super easy process:
You know I like simplicity! So here it goes:
Marinade shrimp with lemon juice and seafood seasoning. Set asid
Cut the zucchini in half and spiralize it into a bowl. Set aside
In a food processor or I personally love my Ninja, add all ingredients for pesto sauce except olive oil and water.
Close lid and gradually start adding the olive oil and water. Set aside
In a deep pan or wok, spray with coconut oil or a splash of avocado oil, cook shrimp for 3 minutes on each side. Place into a bowl and set aside.
Add the tomatoes, spiralized zucchini, and cook for about 4 minutes (I like mine with a slight crunch so make sure you do not overcook it).
Add back in the shrimp and toss with pesto sauce.
Go indulge in it like we did!!! This was a family win!! We had NO leftovers!
